Healthy Brookie

Hi there,


Another recipe is available today, the famous and unmissable brookie. The combination of brownie and cookie together is just a pure hidden gem! The perfect combo for a yummy and gourmand dessert (yet a healthier version as always :D). This recipe is not mine, but it was so good I had to share this recipe on the blog!



Ingredients for the healthy brookie:

For the brownie layer

  • 1,5 cups of almond flour***

  • 1/4 cup of coconut oil

  • 3/4 cup of coconut sugar

  • 5 tbsp of (organic) cacao powder

  • 1 tsp of vanilla sugar (optional)

  • 1 tsp of baking powder

  • 1 egg

  • 1/2 cup of dark chocolate chips

For the cookie layer

  • 1,5 of oat flour (if you don't have some, blended oatmeal will do it)

  • 1/3 cup of coconut flour*

  • 3/4 cup of coconut sugar**

  • 1 tsp of vanilla sugar (optional)

  • 1 tsp of baking powder

  • 2 eggs

  • 1/2 cup of dark chocolate chips

  • 2 tbsp of (organic) almond milk

  • 5 pinches of salt


How to prepare the healthy brookie:


It has never been so simple to make a cake!


Simply mix all the ingredients together for the brownie and whisk until perfectly mixed. Pour the brownie dough into a rectangle dish to make the first layer of the cake. Make sure to press it everywhere.


Then, also mix all the ingredients together for the cookie until nice and homogenous dough. After that, add the dough to the top of the brownie layer to form the second layer. Once again, make sure to press it everywhere.


Finally, place the dish in the oven for 20 min at 400F (200°). Once ready, let it cool down or eat it warm depending on your preferences.
