Am I seriously the only one craving pumpkins at the moment?
Cooking local & seasonal has never been that easier in October and November. From pumpkin pies to pumpkin porridges, pumpkin soups, pumpkin energy balls, or even stuffed pumpkins we looooove pumpkins aka, the #comfortfood!
Today, I'm sharing my latest foodie gem: the savory pumpkin & goat cheese pie. Believe it or not, it's delish yet healthy!
General:
Level: easy
Time: 1h
Ingredients:
1 puff pastry
1 goat log
1 pumpkin
1 handful of nuts
Salt, pepper, paprika
Honey
How to make your savory pumpkin pie:
Peel off the pumpkin and cut it into small cubes
Pour the cubes into a large boiling water pot with some pinches of salt and let it bake
Once the pumpkin is cooked, remove the water and season it
Unroll the puff pastry and make small prints with a fork
Add the pumpkin purée as a base
Add the goat cheese that you previously cut into small cubes
Let it bake in the oven for 40 minutes at 180°
In the meantime, roast the nuts and slightly blend them
Once the pie is fully baked, sprinkle it with the nuts chunks and add a trickle of honey on top of it.
