Hello, hello everyone,
Based on the hype for my last breakfast/brunch recipe I decided to publish it (Yeaah)!
General info

Ingredients
1 cup/ 150 gr of whole flour (also ok with general flour)
2 eggs
1 cup/ 250 ml of oat milk (also ok with other kinds of vegetal milk)
1 tbsp of ricotta
2 tbsp of organic honey (try my godfather's one :D)
3 tbsp of cinnamon
1 pinch of salt
1 bag of baking powder
1 banana, a bit (a lot :D) of maple syrup, and some walnuts for the toppings
How
First, pour the dry ingredients (flour, salt, baking powder & cinnamon) in a big bowl & stir
Second, separate the yolks from the whites of the eggs. Pour the yolk in the bowl containing the dry ingredients, and blend the whites (you want your pancakes fluffy. I know, here on the photo they're not, but I didn't have the blender for it)
Once done, add the whites in the mixture & stir
Add the honey & the ricotta. Keep stirring
Let it rest in the fridge for 20 min
Start to bake your pancakes once the pan is hot. Do not forget to put a bit of olive oil in the pan otherwise, it'll be sticky
